Recipe ~ Gluten Free Cempedak Cake


Artocarpus integer (wikipedia), commonly known as cempedak is a native fruit in southeast asia, like Malaysia and Indonesia. It's same family to Jackfruit, which has a very nice fragrance and sweet taste, a very good choice for baking, or just frying.

I'm a lazy bum, I'll always opt for for recipe as simple as possible, yet delicious. Today, i'm to going share a simple recipe of making cempedak cake. At the same time, I have non gluten-free cake for comparison, to give us an idea how different in making gluten free cake.


Ingredients (for 3-4 servings):

Gluten Free Cempedak Cake                             Non Gluten Free Cempedak Cake
100 grams grapeseed oil                                      125grams butter

100 grams sugar (I typically reduced to 80g)         100 grams sugar
125 grams gluten-free flour                                 125 grams self raising flour
2 eggs                                                                 2 eggs
100 grams of chempedak flesh, deseeded             100 grams of chempedak flesh, deseeded

 

Steps:
  • Mix sugar and butter into mixer, and stir until fluffy.
  • Add flour and eggs alternately. (Make sure you have sifted the flour)
  • Mix in cempedak flesh gently with spatula.
  • Bake at 180deg C for 45 minutes.

 

Peel off the fruits, use a kitchen scissor to cut the flesh to tiny pieces.
I'm using Healtheries Simple Wheat and Gluten Free Baking Mix.

The baking mix i used has pre-mixed with raising agent, so i was very happy to see the cake raised as well as non gluten-free cake. The texture of gluten-free cake is much more "sticky" as compared to cake from all-purpose flour. This is most probably because it's using rice flour instead of wheat flour. The taste wise, to be honest, non gluten-free cake may still taste better, which i find it has the fragrant of wheat. After all, gluten-free cake is still good to go with the cempedak fruit fragrant and sweetness within it.

Endometriosis - Food to Avoid





When I had my first lap last year, I didn't aware of endometriosis diet. However, I was managed to keep my diet simple and plain, and tried getting more fruits and greens. The only food that I was still eating were dairy products. I took ice cream, yogurts, milk, etc. It lasted for 2 months (silly me!), until one day i thought of searching for info on endo diet, and many links came up!

Endo is feeding on estrogen, which found from:
  • body
  • food   (me trying best to follow strictly on the recommendation)
  • toiletries/cosmetics (me trying to change one by one slowly)

 What are the major categories of food to avoid:

Wheat (Gluten)
Why: Wheat has gluten which women with endo are sensitive to.
What: pasta, bread, noodle, cake, etc.
Me: This is a hard one for me, as noodles, pastry are my favourite. I cut out all kinds of noodles, opt for rice made products like rice vermicelli, and gluten free spaghetti. I replace flour with gluten free baking mix (I will share more recipes of my own).

Caffeine
Why: Caffeine increases estrogen levels.
What: coffee, tea, chocolate.
Me: This is #2 hard one for me. I love coffee so much! I missed the aroma, and now I have to keep myself away from it. Well, once in a week, I still take a few sips on it (sinful!).

Red Meat / Dairy Products
Why: They cause inflammation and contain growth hormones.
What: pork, beef, burger, milk, cheese, butter.
Me: I personally find cutting out red meat, makes me feel much better for some reason. Butter can be easily found in many food, like pastry. Therefore, i stopped baking cakes with butter, and looked for recipe that replaced with oil. Why oil ? because It's easy to get like olive oil, grapeseed oils. Other alternative of butter are harder to find within my area.

Soy Products
Why: Soy contains phyto-estrogen which may trigger endometriosis.
What: tofu, soy milk.
Me: To my surprise, my first gynae told me this - keep away from soy product! So i followed.

Refined Sugar / Honey
Why: inflammation agent.
What: all products use defined sugar, like soft drink, coffee, sweet pastry.
Me: I'm getting used to eliminate sugar from my food as much as possible. I replace them with organic cane sugar when it's needed like baking. Once you get used to it, you'll be doing good!


After all, what mentioned are just for reference.  You shall talk to your doctor or dietitian on the diet you have doubts.

Fighting Endometriosis




It's been six months since my last post! Where have i been ? Oh well, I've been in a 'battle' with most women enemy nowadays - endometriosis.

It's been a tough time over the last one year. I've been through 2 laps, to remove cysts. That's no fun girls, and once again it makes me realized that women are really the tougher kind.

Through out the year, I read a lot of information and details on endometriosis, and endo-diet. It's a brand new 'chapter' for anyone, who started picking up new diet regime, and lifestyle. It's not an easy one. I know it.

There are many good blogs and websites on this topic, which I'm going to share more in future posts. With this, I hope to bring little awareness here, and sharings with endo-mates.

Baby’s Naptimes Become Dreamy Adventures


My attention was drawn immediately when i saw these photos. These inspring and creative artwork, won my heart so much.

Queenie Liao, a free-lance artist and mother of three boys living in California, shared the imaginative and adventurous stories of her child Wengenn dreams of during his sleep. Plain cloths, stuffed animals, and other common household materials, are the items Queenie used to create the background setting, and these are easily found in our house.
